You’re probably thinking “holy shit is this chick still posting rubbish book reviews?” and the answer to that is yes, I am because I love a rubbish book review BUT I’m gonna give ya a wee break and post this absolutely ~amazing~ cupcake recipe instead. Enjoy!
Okie dokie.. these buns went down a friggin’ treat in my house (and my Granny’s house) and I used >>this<< recipe right here. I manage to make 15 (pretty large) cupcakes from this so you can sweeten up a small army with them if you fancy it.
CUPCAKES
You’ll need:
- 150g of unsalted butter or stork
- 150g of light brown sugar
- 3 medium eggs
- 125g of self-raising flour
- 25g of cocoa powder
- 1tsp of peppermint essence
- 1tsp of vanilla extract
- 100g of chocolate chips
*side note: because I’m an idiot, I accidentally used regular salted butter for the cupcake mix (oops) and when I say I used ‘vanilla extract’ and ‘peppermint essence’ I really used Madagascar vanilla and American peppermint cuz that’s all I could find. My cupcakes turned out fab so just don’t sweat the small stuff x*
Method:
- Pre-heat the oven to 180°C
- Mix together the stork (or butter in my case lolz) and light brown sugar until they are all light and fluffy
- Add the flour, cocoa powder, eggs, peppermint and vanilla extract and mix again until it forms a cake mix
- Fold in the chocolate chips (gently!!!)
- Bake for 15-20 minutes or until a knife comes out clean
ICING
You’ll need:
- 150g of butter
- 300g of icing sugar
- 1tsp of peppermint essence
- green food colouring
Method:
- Mix the butter until it is smooth and slowly add the icing sugar
- Add the peppermint essence and mix again until fully combined
- Add your desired amount of food colouring and fold together with a spoon
- Pipe onto your cupcakes
Ta-dahh! This recipe is so simple and takes no time at all AND your left with the most delicious cupcakes that are prefect with a wee cup of tea!
